Primaflor vegetable puree with frisée endive



Ingredients (2 people)

Puree

  • Olive oil 10ml
  • Pack choi 100g
  • Carrots 100g
  • Onion 100g
  • Choi sum 100g

Preparation time: 16 min.

Method

Puree

  • Bring a pan of water to boil.
  • Add the vegetables and cook for 8 minutes.
  • Remove and mix together the vegetables with a splash of oil in a blender until you get a smooth puree.
  • Cut the frisée into small pieces and place into a bowl with water and ice.

What you'll need

  1. Sharp knife
  2. Colander
  3. Slotted spoon
  4. Non-stick frying pan
  5. Chopping board
  6. Blender
  7. Large whisk
  8. Wok

Preparation

  1. Heat the puree in a pan and remove from the heat when it starts to boil.

Serving

  1. Pour the puree into a bowl.
  2. Place the frisée chunks on top.
  3. Drizzle with a few drops of olive oil.
